    "Amylase" is an enzyme which is useful in converting the complex food into the simple, small pieces so that one can digest food easily. It breaks down the vegetable starch, which is found in potatoes, snack foods, etc. Basically, enzymes are the types of proteins which enhance the rate of the chemical reaction in particular substances.
