mixed dry fruit is nice as the fruit plumps up. banana and brown sugar is nice. porridge can be boring by itself
I haven't had oatmeal since I was a kid, but I liked it with milk and sugar. Chopped walnuts would have been a nice addition too.

Ah, somebody beat me to it. One of the best things to do with chopped dates. Also with Cream of Wheat.

I cook old fashioned oats in a microwave. I start them out with salt, pepper a finely diced green onion and a minced clove of garlic. When the oatmeal is about half done I break an egg over the top to poach while the oatmeal finishes cooking. People say this is gross but then I'm no fan of brown sugar raisins and / or apples whatever.
Chia seed, ground flax, apples.
Pinch of salt and cinnamon, almond butter, chopped up dates
I just use those microwave instant packs .. apple/cinnamon. But before I nuke it I add a handful of fresh or frozen raspberries (I buy them fresh, and some of them I put on a cookie sheet and freeze .then bag up). And once cooked, I add a big dollop of low-fat vanilla yogurt. Sometimes instead of raspberries, I will toss in some dried cranberries instead, before cooking. Raisins are too sweet for my preferences.
