Explaining Pokemon to Girlfriend?

I have been a fan of Pokemon for 20 years, and am trying very hard on how to explain Pokemon to my girlfriend. So far she won't take my offer to play the first generation of games and that would be the best way for me to explain it to her. Would the first 3 movies be a good idea? Or any links for her to read..any suggestions I am open to.
