Why are ALL NHL players so respective of their countries flags and the coaches all wear nicely tailored suits?
Rough on the ice, gentleman off the ice. Actually it's just the rules for each league that desiginates what players wear to and from games. In hockey it's become a tradition and it's stuck even for the younger players. I played junior hockey and used to wear a suit before and after every game. Even when I got injured I had to wear a suit on all gamedays if I'm at the rink.

Coaches wear suits because league rules dictate that they have to wear suits and ties.
Because Hockey is true sport. Canada is its guardian.
