Get soft shell corn tortillas. Double them up & warm them lightly. Marinate pork stew meat with seasoning of your choice, plus pineapple juice. Chop onions, radish, cucumber & cilantro & add salsa.

I have a couple of ideas for you. TERRIFIC TACOS 1 lb hamburger 1 pkt Taco seasoning (I like Schilling low sodium best) 1 can diced tomatoes, do not drain 1 can black beans (you could use pinto beans) 1 box Ortega Whole Grain Taco Shells - not all stores have these but they are amazing! They have a great flavor like no other taco shell I've ever had. Sour Cream Shredded Cheese Your favorite salsa Shredded lettuce Brown the hamburger in a frying pan and drain off the fat. While that's cooking put the beans in a strainer and run water over them till you rinse off all the yukky liquid that was in the can with them. Let them sit to drain off the water a bit. Add the whole can of tomatoes, juice and all to the hamburger. Stir in the taco seasoning as well. Now add the beans and stir it all together. Let it heat 5-10 min so everything is nice and hot. To assemble; Spoon a bit of sour cream into the taco shell and gently smear it across one side of the shell. Spoon the meat into the bottom of the shell. Top with cheese, salsa and lettuce in whatever order you prefer and enjoy. REDNECK TACOS Shredded BBQ Pork 2 lb pork loin roast 1 16 oz bottle of BBQ sauce – I like Jack Daniels Original Corn Cakes 1 Jiffy Corn Muffin mix 1 egg ½ cp milk Cole Slaw 1 bag of shredded cabbage ½ cp mayo ¼ cp sour cream ¼ cp milk 1 ½ tsp white vinegar 2 ½ tsp lemon juice ¼ sugar ½ tsp black pepper Shredded BBQ Pork Place the pork roast in a crock pot and pour 1 ½ cp of the BBQ sauce over it. Cook on low all day; 8-12 hrs. Remove from the crock pot and pull apart with two forks. Stir the rest of the BBQ sauce into the shredded pork. Makes about 6 cps shredded pork. Corn Cakes - these are similar to pancakes Mix the muffin mix with the egg and milk. Spoon into a hot skillet to make corncakes about 4” across. Cook at about med heat just like a pancake except they will not develop bubbles indicating when they’re ready to flip. Rest on a wire grate when they’re done. Makes 6 - 4" corncakes. Cole Slaw Combine everything except the cabbage in a large bowl and stir together till smooth. Add the cabbage and toss till it’s well coated. To assemble the Redneck Taco: place one corncake on a plate, top with 1 cp of shredded beef and about ½ cp of cole slaw. Serve with a fork.

1 lb sirloin steak 6 4-inch Corn tortillas 2 cup guacamole (our favorite recipe can be found here) 1 Spanish white onion .5 cup All-purpose flour 2 tbsp Olive oil 2 tbsp vegetable oil 1 tsp Red pepper flakes 2 Garlic cloves, pressed Salt to taste Method: Marinate steak in olive oil, red pepper flakes, and garlic cloves for at least one hour. Peel onion and cut into thin slices. Toss onions in flour and fry in vegetable oil in a skillet over medium-high heat. Add salt to onions to taste. Add salt to steak to taste and cook in sauté pan over medium heat to desired temperature. Cut steak into quarter-inch slices. Warm tortillas in oven. Top tortilla with steak, crispy onions, and .5 cup of guacamole each.

Ground beef + a packet of taco seasoning (cumin, chili powder, salt, pepper and garlic powder). Chopped onions mixed in is also awesome.

You need a protein, like chicken, beef, pork, or shrimp/fish. All work wonderfully. With that protein, you get your spices together. I don't measure, I just go, but you can add things like cumin, chile powder (however hot you want it), garlic, salt, pepper (or cayenne), lime, lemon, etc. I'd say a good combo for specific proteins would be- Chicken- cumin, chile, lime, garlic, salt and pepper Steak- Chile, garlic, salt and pepper Pork- cumin, chile, lemon, salt and pepper Shrimp/fish- LIGHTLY with chile, garlic, lemon or lime, and salt and pepper. You don't want too many seasonings with fish because it will be overpowering. So lightly oil a good sized pan, add the meat you want, then seasonings you choose, and let it simmer on low for a while, then poof, yumminess :) With the fish, you'll have to cook for a shorter amount of time. Add lettuce, beans, avocado, pico, tomatoes, onions, cilantro, guac, all of these, some of these, and you got yourself some tacos. Traditional street tacos are a protein with finely diced onion and cilantro, served in a corn tortilla.
