Some fruits are best picked green especially if they need to be sent some distance to market. Pears are best picked whilst still hard, however, figs do not ripen off-tree and most small berry [strawberries, raspberries, blackberries, currants, grapes blueberries etc] fruits need to be ripe before picking, hence the short shelf life of these fruits. Some varieties of apples need picking when ripe but others, especially those to be put in cold store to be eaten in the winter and spring are best picked slightly under-ripe.

Banana ripens after you pick them.
