Why do people cry tears of joy at weddings, after baptisms, etc?

Strong emotions can cause tears. It's perfectly normal.
You've never seen people who, when they are REALLY happy, sometimes cry as a response to that kind of elation? You don't get out much, do you...

Strong emotions bring tears. Maybe not for everyone, but it's a common response.
People often cry when they're experiencing an extreme emotional response.
Happiness is an emotion also.
